We got to catch up with Grain Traders' Executive Chef Gisela Salazar Golding, who shared with us her secret in creating one of her favourite sauces, the Salsa Verde sauce.
In her words
"Salsa verde or Chimichuri is very common in South America and Caribbean countries. Each country has their own version with different names. Normally, the sauce is served with beef and Fish made in the barbecue also with types vegetables like roasted potatoes or manioca.
I believe this is one of the most popular dishes because is a fresh and healthy sauce that goes well with everything without overpowering other flavours in their bowl."
The Salsa Verde recipe
Here is the recipe for Salsa Verde, one of Grain Traders' most popular sauces. It's great for meats and fish, especially for barbeques!
- 100g Coriander Chopped (clean)
- 40g English parsley Chopped (plugged and clean)
- 10g Fresh Oregano Chopped (plugged)
- 100g Red capsicum Diced
- 20g Garlic paste
- 5g cumin powder
- 5g chili flakes
- 8g salt
- 5g black pepper
- 100g White vinegar
- 250g Extra virgin olive oil
- Clean and chop the coriander, english parsley, and fresh oregano
- Dice the red capsicum into small cubes
- Mix with the rest of the ingredients to create the Salsa Verde sauce
