There's a primo pasta moment happening in Singapore right now. While we're not the first place that springs to mind when you think of pasta, we've got some great places serving up their classic tomato-y masterpieces. The secret to any great bolognese is making sure that the rich beef-based sauce has just the right balance of meaty juices and ripe tomatoes, with a liberal sprinkling of fresh herbs throughout. Garlic, onions and bacon can all be added to give it a little extra oomph.

Outside of Italy, sauce tends to be poured on top of the pasta tangles. But if you want it authentically Italian-style, you mix the sauce and spaghetti together. The result is a much less liquid mix that still packs a consistent flavour all the way through.

Italian by name

Bolognese sauce, known in Italian as ragù bolognese, originated from – and is named for – Bologna in Northern Italy. An authentic ragu sauce is slowly cooked involving several techniques, including sweating, sautéing and braising. Ingredients typically include medley of onion, celery and carrot, different types of minced or finely chopped beef, and sometimes fatty pork.

Although it has its origins in Bologna, we have the mass emigration of Italians in the late 20th century to thank for bringing this comfort food staple to our plates. Spaghetti bolognese as we know it is widely believed to have evolved in the UK or United States, as part of a culinary fusion between Italian and local cuisine.
