Why We’re Just Wild About Kampong Chicken

Just as Waygu beef, Italian truffles and Beluga caviar are highly prized among foodie circles, there's another far more down to earth ingredient whose simple name belies just how special it is to many people in Singapore and beyond.

The reason for its relative obscurity is because it's not something that appears on the menus of many of the city's Chinese takeaways but the good news is that it's a word that often features in the names of the restaurants that serve it – and that word is "kampong" (Malaysia) or "kampung" (Indonesia). It refers to the particular breed of chicken, the Ayam Kampong, that families traditionally allow to roam free until it's time for the pot.

They're often served at family occasions and other celebrations and are prized for their flavour and the firm flesh that's a result of their free-range lifestyle. So, they're well worth seeking out wherever you can find them and, believe us, the taste alone may even be enough to persuade the keenest fan of vegetarian fine dining to reconsider their life choices.

For the sheer variety of kampung dishes, the 5 Star Hainanese Chicken Rice is the place to go. As well as selling it whole or as half a chicken, they also serve it by the single portion. Or, if you want something a little more interesting, then there's the choice of chicken with basil, chilli, and rice wine and even ginger and spring onion too. Variety is the spice of life after all!

You might be surprised to find a kampong dish at somewhere called the Focaccia Café but you certainly will be able to enjoy it there. They use the traditional method of encasing the chicken in salt before baking – a tried and tested way to achieve maximum flavour and succulence.
